Method
Fry the streaky bacon in a little oil until starting to crisp, remove and reserve.
Next return the pan to the heat and start to fry the back bacon and black pudding, when the black pudding has a light crust, turn and cook on the other side.
Once cooked remove from the pan and reserve.
To build the sandwich, lightly butter both slices of bread, followed by a generous spread of mayonnaise.
Lay the back bacon on the bottom, followed by the slightly crisp smoked streaky bacon.
Next crumble chunks of the black pudding on top of the bacon and season with black pepper.
Add ketchup and top with the top slice of bread, cut in half and serve.
