In a sauce pan combine the water and sugar.
Heat to 80 ̊C to dissolve the sugar.
Place, all the spices & orange peel in to a jar or container.
Pour the warm syrup over the spice mix, leave to cool.
Then cover with a lid and place in the fridge for 24 hours.
Pass the syrup through a fine sieve and discard the spice mix, keep in the fridge until required.
